What is Pepsin?
Pepsin is a digestive protease extracted from the gastric mucosa of animals and is secreted by the gastricchiefcell in the stomach, which functions to break down proteins in food into small peptide fragments. The precursor of pepsin is called pepsinogen.
Pepsin breaks down peptide bonds formed by aromatic or acidic amino acids in proteins, so it catalyzes the hydrolysis of casein, globulin, histone, keratin in animal horns, nails and feathers, as well as catalyzing the hydrolysis of plant proteins.
Pepsin is a white or light yellow powder; no moldy odor; moisture-attracting; aqueous solution shows acidic reaction. Optimal temperature 37ºC/optimal pH 2.

Function

Mainly used in the manufacture of fishmeal and other proteins (such as soy protein) hydrolysis, curdling characteristics in the manufacture of cheese (in combination with rennet), also used to prevent cold clouding of beer.
